In accordance with the current regulations, Iberian products are grouped into the following categories, which are recognized based on the color of the assigned seal.
Black seal: the product comes from Iberian pigs that lived free in the "dehesa", fed with acorns (bellotas), grass and other pasture resources during alpine pasture, without any additional feed, 100% pure Iberian breed. It may be called “pata negra”.
Red seal: the product comes from Iberian pigs that lived free in the "dehesa", fed with acorns (bellotas), grass and other pasture resources during alpine pasture, without any additional feed, 50% or 75% pure Iberian breed.
Green seal: (cebo de campo): produced from pigs that, even if they could benefit from the grazing resources of the pasture and of the field during alpine pasture, were fed with feeds (mainly made with cereals and legumes) and that have been managed by outdoor farms, intensive or extensive, that can have part of their surface closed.
White seal: coming from (cebo iberico). Pigs are fed with feeds mainly made with cereals and legumes, that grow in intensive farming systems.
